How can I keep text in copper free of solder resist?
There are two ways:
First, copy the text over itself and change the layer of the second text to the appropriate solder resist mask. Then exactly only the letters themselves will be kept free from solder resist. For copper on top ( = layer 16), for example, take layer 18 = solder resist on top. Everything that is displayed in green in this layer is then in reality without solder resist, i.e. masked out.
Secondly, place a more generous rectangle over the text in the corresponding solder resist mask, as described above. Then, if necessary, a larger area around the letters will be kept free of solder resist.
In any case: only do this if the copper will be refined afterwards, i.e. either tin-plated or e.g. chemically gold-plated. Copper alone corrodes later and becomes unsightly.
Attention: The 3D view does not always display this situation correctly!
