How can I edit the properties of all components of the project in a table?
From version V32.3.0.35, the "Component Properties Explorer" can be started:

You can sort the components by name or value and use the [Open selection] button at the top right to display the desired properties as columns. You can edit the properties directly in the table (including copy&paste, of course) and single fields can be easily transferred to the fields below by pulling down a small arrow:

The new feature can then be found in the "Components" menu or in the "Packages" menu under "Component properties as table...". Also at the bottom of the dialog for BOMs and here:
